Mitigating Cooking Effluent Pollution in High-Volume Commercial Food Manufacturing
SUMMARY
In large-scale commercial and industrial food operations, cooking over a million meals per week can generate significant levels of airborne pollution. This includes oils, fats, odors, and carbon particulate matter that, if untreated, contribute to environmental contamination and regulatory non-compliance. Air Dynamics Industrial Systems Corporation was approached to solve this issue for a major food manufacturing facility using advanced CKV air scrubber technology.
The goal: implement an effective system for commercial kitchen ventilation that addressed air sanitation, odor control, and grease vapor mitigation at scale.
The facility faced several critical challenges common to high-output industrial kitchens:
- Excessive emission of cooking effluent, including volatile organic compounds (VOCs), grease-laden vapors, and smoke from proteins being par-fried, grilled, or deep-fried.
- Environmental pollution from rooftop grease fallout, air discharge contamination, and runoff pollution affecting surrounding ecosystems.
- Compliance with strict air quality and sanitation regulations, including odor control and safe discharge of treated air.
- Fire risk mitigation, particularly around grease ducts and exhaust systems where accumulations can occur.
- Odor complaints from nearby businesses and neighborhoods, due to poorly managed kitchen exhaust.
Traditional filtration and hood systems were no longer sufficient to manage the sheer volume of effluent. A comprehensive, multi-stage air scrubbing solution was required.
THE SOLUTION
Air Dynamics installed its Hydrodynamic CKV Air Scrubber System, a three-stage wet scrubber designed specifically for commercial and industrial kitchen ventilation applications:
- Stage One CKV Scrubber: Captures and removes large airborne particles, oil and grease vapors, and high concentrations of carbon solids at the source — immediately downstream from CKV hoods.
- Stage Two CKV Scrubber: Targets medium to fine particulates and begins sanitizing the scrubber liquor to ensure safe, clean operations.
- Stage Three CKV Scrubber: Final sanitation and disinfection phase of the air stream and scrubber liquor. This ensures that air reintroduced to the atmosphere is clean, odor-free, and compliant with air quality standards.
The system was integrated with the facility’s existing ventilation infrastructure, including exhaust stacks and rooftop fans, with modifications to improve overall airflow efficiency and reduce backpressure.

RESULTS
- Over 90% reduction in airborne grease and carbon particulate emissions, significantly improving rooftop and surrounding ground cleanliness.
- Elimination of odor complaints from the surrounding community and commercial neighbors.
- Compliance achieved with local and federal air quality standards, supporting corporate sustainability and ESG reporting.
- Enhanced fire safety by reducing grease buildup in ducts and rooftop exhaust systems.
- Improved equipment lifespan and lower maintenance costs for fans and ducts due to reduced oil and particulate accumulation.

Conclusion
Air Dynamics’ Hydrodynamic CKV Air Scrubber proved essential for pollution control in commercial cooking operations. By implementing a solution tailored to the complexities of industrial kitchen exhaust and food manufacturing environments, the client not only met regulatory demands but also set a new standard in clean cooking exhaust systems. For any facility producing high volumes of cooked food, Air Dynamics offers proven, scalable solutions to control cooking emissions, reduce airborne grease, and protect both people and the environment.
